Grate or finely chop the tomatoes. If using grated tomato, discard the skin.

In a pan with olive oil over medium heat, simmer the tomatoes for 8–10 minutes, until most of the liquid evaporates and you get a thick tomato base.

Add the baby spinach to the pan and stir just until it wilts (about 1 minute).

In a small bowl, gently whisk the eggs with pepper and oregano. Pour them into the pan with the tomato and spinach.

Reduce the heat to low. Slowly stir the eggs with a spatula so they stay creamy and soft.

Just before the eggs are fully cooked, stir in the crumbled feta cheese. Remove from heat, sprinkle with fresh herbs and serve on toasted whole-grain bread.
