Prepare the flax "egg" by mixing ground flaxseeds with water and letting it rest for 10 minutes to thicken. Meanwhile, preheat the oven to 180 °C.

In a large bowl, mix the spelt flour, baking soda, and salt. In a separate bowl, pour hot coffee over the cocoa powder and stir until a smooth paste forms (blooming technique).

Add coconut oil, coconut sugar, vanilla, and the prepared flax mixture to the cocoa paste. Whisk everything together well.

Pour the wet ingredients into the dry ones and gently fold together with a spatula until just combined. Don't overmix, so the brownies stay fudgy. Finally, fold in half of the chopped dark chocolate.

Pour the batter into a baking pan lined with parchment paper. Sprinkle the remaining chocolate on top and, if desired, a pinch of sea salt.

Bake for 22–25 minutes. The brownies should still be slightly soft to the touch in the center. Be sure to let them cool completely before cutting, as this is when the texture sets.
