Preheat the oven to 170 °C and line a baking dish with parchment paper.

In a bowl, mix the almond flour, erythritol, egg, and melted butter. Press the dough into the bottom of the baking dish and bake for 10 minutes.

Meanwhile, use a mixer to whip the cottage cheese, mascarpone, erythritol, vanilla, and lemon zest. Add the eggs one at a time, mixing until the mixture is completely smooth.

Pour the cottage cheese mixture over the partially baked base and return to the oven for an additional 20–25 minutes, until the filling is firm at the edges but still slightly "jiggly" in the center.

In a saucepan, heat the raspberries with erythritol until they dissolve. For a smooth topping, press them through a sieve. Dissolve the previously soaked gelatin in the hot fruit mixture.

Pour the raspberry topping over the baked and slightly cooled cottage cheese layer.

Place the dessert in the refrigerator for at least 3 hours, until all layers are completely set, then cut into squares.
