Cook the whole wheat penne in a pot of salted boiling water according to the package instructions (usually 9–11 minutes) until "al dente". Drain and reserve 0.5 dl of the pasta cooking water.

While the pasta is cooking, heat the olive oil in a pan. Season the chicken strips with salt and pepper and fry them over medium heat (about 3–4 minutes per side) until golden brown. Remove the meat from the pan and keep it warm.

Add the onion and zucchini to the same pan. Sauté for 3–4 minutes so the zucchini softens slightly but remains firm. Add the garlic and sun-dried tomatoes and sauté for another 1 minute until fragrant.

Pour the chicken stock and cooking cream into the pan. Add the oregano and basil. Cook over moderate heat for 2–3 minutes until the sauce thickens slightly.

Return the fried chicken to the sauce and stir in the fresh spinach. Once the spinach has wilted, add the cooked penne. If needed, add a little of the pasta water for a better texture.

Mix everything well, sprinkle with parmesan, and serve immediately.
