Instructions

Cut the red cabbage into strips as thin as possible (use a mandoline or a sharp knife). Grate the carrot.

Wash the apples and cut them into thin strips (julienne). It is recommended to leave the peel on, as it contains the most fiber.

In a small bowl, prepare the dressing: mix the olive oil, apple cider vinegar, lemon juice, honey, salt and pepper. Stir well until the honey completely dissolves.

In a large bowl, combine the sliced cabbage, carrot and apples. Pour over the prepared dressing and mix everything well together.

Quickly toast the walnuts in a dry pan until fragrant, roughly chop them and sprinkle over the top of the salad.

Add chopped fresh parsley and serve immediately, or let it rest for 10 minutes to let the flavors blend.
