In a large pot, sauté finely chopped onion in olive oil until translucent. Add the turkey meat and sear it over high heat until it changes color.

Add the sliced carrot, parsley root and celery to the meat. Sauté everything together for another 5 minutes so the vegetables release their aroma.

Pour in the stock to cover the vegetables and meat. Add the diced potato, bay leaf, marjoram, salt and pepper. Cover and cook over medium heat for 25–30 minutes.

While the stew is cooking, prepare the dumpling mixture: whisk the egg, add spelt flour and salt. Mix until you get a thick but still sticky mixture. Let it rest for 10 minutes.

Add the peas to the stew. Using a small spoon dipped in hot broth, shape small dumplings and drop them into the stew. Cook for another 5–8 minutes, until the dumplings float to the surface.

For a thicker texture, you can carefully mash one of the cooked potatoes in the pot with a fork. Finally, season the stew with lemon juice and sprinkle with fresh herbs.
