Pound the beef steaks with a meat mallet to break down the fibers. Season evenly with salt and pepper on both sides.

Heat olive oil in a large pan. Quickly sear the steaks over high heat (about 2 minutes per side) until they develop a brown crust. Remove the meat from the pan and place it on a plate.

Add thinly sliced onion to the same pan. Sauté over medium heat for about 10–15 minutes, until completely soft and golden-brown (caramelized). Add a tablespoon of water if needed.

Add chopped garlic, thyme, and bay leaf. Sauté just until the garlic becomes fragrant, then pour in the balsamic vinegar and scrape the bottom of the pan with a wooden spoon (deglazing).

Return the meat to the pan with the onions and pour hot stock over everything. Cover and simmer over low heat for 75–90 minutes, or until the meat is completely tender.

Once the meat is tender, if desired, reduce the sauce further uncovered to let it thicken naturally. Remove the bay leaf and thyme sprig before serving.
