Preheat the oven to 200 °C.

In a large bowl, mix the ground meat, grated onion, garlic, and all the spices (cumin, coriander, oregano, paprika, salt, and pepper).

Knead the mixture with your hands for at least 5 minutes. This is key to making the meat compact and smooth, which will later allow for thin slicing without crumbling.

Shape the meat into a firm, elongated loaf (like a large sausage). Wrap the loaf tightly in aluminum foil like a candy wrapper.

Place the foil-wrapped loaf on a baking tray and bake for 30–35 minutes. After this time, unwrap the foil and bake the meat for another 5–10 minutes, until it lightly browns on the outside.

While the meat is baking, prepare the sauce: mix Greek yogurt, crushed garlic, and lemon juice. Slice the vegetables (cabbage, tomato, cucumber) into thin slices.

Remove the baked meat from the oven and let it rest for 5–10 minutes. This is essential for the juices to settle.

Using a very sharp knife, slice the meat as thinly as possible (as if slicing a real doner kebab).

Quickly warm the pita breads, fill them with the sliced meat, plenty of vegetables, and drizzle with the yogurt sauce.
