Preheat the oven to 180 °C. Lightly grease a baking dish with butter or coconut oil.

In a large bowl, mix the chopped apples, lemon juice, cinnamon, vanilla, and cornstarch. Stir well until all the apple pieces are evenly coated. Pour them into the prepared baking dish and spread evenly.

In the same bowl (no need to wash it), prepare the topping. Mix the oats, almond flour, chopped walnuts, cinnamon, and salt.

Add the melted butter and maple syrup to the dry ingredients. Mix with a fork or your fingers until the ingredients clump together.

Sprinkle the topping evenly over the apples. Don't press it down too much; we want it to stay light and crunchy.

Bake for 40 to 45 minutes, until the apple filling starts bubbling at the edges and the topping is golden brown. If the topping browns too quickly, cover it with aluminum foil for the last 10 minutes.

Let the crumble rest for at least 10 minutes before serving, so the sauce around the apples can thicken.
