Instructions

In a large pot, bring salted water to a boil and cook the whole-grain noodles according to the package instructions, so they remain al dente. Before draining, reserve 150 ml of the cooking water.

In a pan with olive oil, over low heat, sauté the chopped shallot until it becomes translucent and soft (about 3 minutes). Do not let it brown.

In a small bowl, mix the Greek yogurt with lemon juice and 50 ml of the warm pasta cooking water to get a smooth, runny mixture.

Add the baby spinach to the pan with the shallot and stir just enough for it to wilt slightly. Then tip the drained noodles into the pan.

Pour over the yogurt mixture and add a bit more cooking water if needed. Gently stir over low heat to create a velvety emulsion.

Remove from heat and gently fold in the strips of smoked salmon, dill, capers and lemon zest. Season with pepper to taste and serve immediately.
