Instructions

Cut the tempeh into small cubes and finely chop the garlic.

In a bowl, mix the tamari, mustard, maple syrup, ground ginger, lemon juice, and chopped garlic. Add the tempeh to the marinade and let it marinate for 20 minutes.

Preheat the oven to 200 °C and line a baking sheet with baking paper.

Peel the sweet potato and cut it into cubes, cut the broccoli into florets, and slice the bell pepper into strips. Combine everything in a bowl with olive oil, a pinch of salt, and pepper.

Arrange the vegetables and marinated tempeh on the baking sheet and bake for 20–25 minutes (turning once halfway through). Drizzle with the remaining marinade before serving.
