Preheat the oven to 200 °C. Cut the cauliflower into smaller florets, drizzle lightly with oil and bake on a baking sheet for 15–20 minutes, until the edges turn golden brown. This will prevent the cauliflower from becoming too soft in the curry.

Heat coconut oil in a wok and sauté the onion until translucent. Add the garlic, ginger and curry paste, and sauté for another 1 minute to release the aromas.

Add the pieces of chicken to the pan. Cook the meat over high heat for about 5 minutes, until browned on all sides. Season with salt and pepper and add the turmeric.

Pour in the tomato passata and coconut milk. Stir well and let the sauce simmer gently over medium heat for about 10 minutes, until slightly thickened.

Stir the roasted cauliflower florets into the sauce and cook for another 2–3 minutes, so the flavors combine. Finally, add lemon juice for freshness.

Serve in deep plates, optionally with a side of quinoa or cauliflower rice for even fewer carbs.
