Take the meat out of the fridge at least 30 minutes before cooking so it reaches room temperature. Pat it dry with a paper towel and generously season with salt and pepper on all sides.

Heat a pan until very hot and add a tablespoon of oil. Sear the meat over high heat for about 3–4 minutes on each side (for a medium-rare doneness). Don't forget to sear the edges as well.

Transfer the cooked meat to a cutting board, loosely cover it with foil, and let it rest for at least 8–10 minutes. This step is essential to keep the juices in the meat.

While the meat is resting, prepare the dressing in a small bowl: mix olive oil, balsamic vinegar, mustard, horseradish, and honey. Stir well until it forms an emulsion.

In a large bowl, prepare a bed of lettuce, tomato, and onion. Drizzle with two-thirds of the dressing and toss gently.

Using a sharp knife, slice the cooled roast beef into very thin slices (against the grain). Place the slices on top of the salad, sprinkle with feta, and drizzle with the remaining dressing.
