Preheat the oven to 200 °C (fan) or 220 °C (conventional). Line a baking sheet with parchment paper.

Cut the sausages into approximately 2.5 cm thick rounds. Slice the peppers into strips and cut the onion into wider wedges.

In a large bowl, combine the sliced vegetables and sausages. Drizzle with olive oil and balsamic vinegar.

Add the minced garlic, oregano, salt, pepper, and chili. Mix everything well so the ingredients are evenly coated with the seasonings.

Spread everything out on the baking sheet in a single layer. It's important not to overcrowd the pan, as this is the only way the vegetables will roast nicely instead of steaming.

Bake for 20–25 minutes. Carefully stir the contents of the pan halfway through. The dish is ready when the vegetables are tender and the edges are slightly browned.

Before serving, sprinkle the dish with fresh parsley or basil.
