Cut the chicken fillet into smaller pieces or slices, salt and pepper them. Heat olive oil in a pan and sear the meat on both sides until golden brown. Remove the meat from the pan and keep it warm.

In the same pan, sauté the onion until translucent. Add the sliced mushrooms and cook until they release their water and lightly brown. Finally, stir in the garlic and thyme until fragrant.

Rinse the buckwheat groats under running water and add them to the pan with the mushrooms. Sauté together briefly (about 1 minute) so the groats absorb the flavors.

Pour hot stock into the pan and return the seared chicken to it. Once it comes to a boil, reduce the heat to minimum, cover, and cook for 15–20 minutes, until the buckwheat has absorbed all the liquid.

Turn off the heat and let the dish rest covered for another 5 minutes, so the buckwheat becomes completely fluffy. Sprinkle with fresh parsley before serving.
