Instructions

Preheat the oven to 170 °C. Pat the meat dry, then season well with salt and pepper on all sides.

In a pan over high heat, warm one tablespoon of oil and quickly sear the meat on all sides (about 2 minutes per side) until it forms a brown crust. Transfer the meat to a roasting pan.

In the same pan, quickly sauté the onion and carrot, then add them to the roasting pan around the meat. Add the sliced potatoes, crushed garlic, and herbs.

Drizzle everything with the remaining two tablespoons of olive oil and the stock. Cover the roasting pan tightly with a lid or foil.

Roast in the oven for 70 minutes. Then uncover the pan, raise the temperature to 200 °C, and roast for another 15–20 minutes until the potatoes turn crispy and the meat gets its final color.

Remove the meat from the oven and let it rest for at least 10 minutes before slicing so the juices can settle. Cut into thin slices and serve together with the roasted potatoes and carrots.
