Preheat the oven to 200 °C. Place the eggplant slices on a baking tray and lightly brush them with olive oil using a brush (use about 30 ml). Bake for 20 minutes, until softened and lightly browned.

Meanwhile, prepare the filling: blend the walnuts, garlic, and herbs with 15 ml of olive oil and parmesan into a thick, dry paste. If needed, add a tablespoon of water to help bind the mixture.

Spread a thin layer of tomato passata in the baking dish. Arrange the first layer of baked eggplant slices on top.

Top each slice with a bit of the walnut paste and a piece of mozzarella. Repeat the process until all the eggplant slices are used.

Bake for another 10–12 minutes at 190 °C, until the cheese melts and the walnuts become fragrant. Let the dish rest for 5 minutes before serving so the flavors can meld.
