Bring salted water to a boil in a large pot and cook the buckwheat pasta according to package instructions (usually 8–10 minutes). Just before draining, reserve about 100 ml of the cooking water.

While the pasta is cooking, sauté the shallot in olive oil in a pan until translucent and softened.

Add the wild asparagus and sauté over medium heat for 3–5 minutes. Add the garlic, and once fragrant, deglaze with white wine if desired. Cook until the liquid has reduced by half.

Add the drained pasta to the pan with the asparagus. Pour in the reserved cooking water and add the grated Parmesan. Stir quickly over the heat to create a creamy emulsion.

In a separate small pot, prepare a poached egg (3–4 minutes in gently simmering water with vinegar), or simply soft-boil an egg (6 minutes).

Plate the pasta, top with the egg, season generously with pepper, and sprinkle with fresh parsley. Cut the egg open before eating so the yolk runs over the pasta.
