Peel the apple (optional) and grate it on the finest side of the grater. If the apple is very juicy, gently squeeze it between your palms to remove excess juice.

In a large bowl, combine the ground chicken meat, grated apple, minced garlic, sage, thyme, nutmeg, salt and pepper.

Thoroughly mix the mixture with your hands so that the spices and apple are evenly distributed throughout the meat.

With dampened hands, shape the mixture into meatballs of the desired size (usually about 8–10 smaller flat rounds).

Heat olive oil in a pan over medium-high heat. Cook the meatballs for 4–5 minutes on each side, until golden brown and fully cooked through in the center.

Remove the meatballs from the pan and let them rest for 2 minutes before serving, so the juices in the meat can settle.
