Instructions

  1. 1Preheat the oven to 200 °C. Place the sweet potato, Brussels sprouts, and chicken on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, and cinnamon.
  2. 2Roast the vegetables and chicken for 25–30 minutes, until the potato softens and the sprouts become slightly crispy at the edges.
  3. 3Meanwhile, cook the quinoa in a pot according to the instructions. Once cooked, let it rest for 5 minutes, then fluff it with a fork.
  4. 4In a small bowl, prepare the dressing: mix the tahini, maple syrup, apple cider vinegar, and lemon juice. Add water until you get a smooth, creamy texture.
  5. 5Divide the curly kale (optionally massaged beforehand with a little oil), cooked quinoa, roasted vegetables, and chicken between two large bowls.
  6. 6Add fresh apple slices and walnuts. Generously drizzle everything with the maple tahini dressing and serve.
