Instructions

Preheat the oven to 200 °C. Pour the chickpeas into a colander and rinse thoroughly under cold water.

Spread the chickpeas onto a clean kitchen towel. Gently rub and pat them with another towel to remove all moisture and any loose skins (removing the skins increases crunchiness, but it's not essential). The chickpeas must be completely dry.

Spread the dry chickpeas on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt. Mix with your hands so they are evenly coated with oil. Bake for 25–30 minutes, stirring halfway through.

Once the chickpeas are golden brown and crispy, remove them from the oven. Immediately (while still hot and slightly moist from the oil) transfer them to a bowl and add smoked paprika, cumin, garlic, and cayenne pepper. Mix well.

For maximum crunchiness, return the seasoned chickpeas to the turned-off oven (with the door slightly ajar) for 5–10 minutes. Serve cooled.
