Instructions
- 1Preheat the oven to 200 °C. Place the eggplant cubes on a baking tray, drizzle with one tablespoon of olive oil and lightly salt. Bake for 20–25 minutes, until soft and golden brown.
- 2While the eggplant is roasting, bring salted water to a boil in a pot and cook the spaghetti al dente. Before draining, reserve 100 ml of the cooking water.
- 3Heat the remaining tablespoon of oil in a larger pan. Add the garlic and chili and sauté briefly (about 1 minute) until fragrant.
- 4Add the cherry tomatoes to the pan and cook over medium heat for 5–8 minutes, until softened and releasing their juices. If needed, gently mash them with a fork.
- 5Add the roasted eggplant and cooked spaghetti to the pan with the tomatoes. Pour in half of the reserved water and mix everything together over the heat for 1–2 minutes.
- 6Remove the pan from the heat. Stir in the ricotta, parmesan and chopped basil. If the dish is too dry, add the remaining cooking water to achieve a creamy texture. Serve immediately.
