Clean the chicken livers, remove any connective tissue, and pat them dry with a paper towel. Cut larger pieces in half.

Slice the onion into thin strips and cut the pepper into strips as well. Finely chop the garlic.

Heat half of the olive oil in a pan and sauté the onion and pepper over medium heat for about 5–7 minutes, until softened. Remove the vegetables from the pan and keep them warm.

Add the remaining oil to the same pan and increase the heat. Cook the livers for 3–4 minutes on each side. It's important not to overcrowd the pan, so the livers sear rather than stew.

Return the sautéed vegetables to the pan, add the chopped garlic, marjoram, and ground paprika. Stir everything together for another 1–2 minutes.

Season the dish with salt and pepper just before serving, so the livers stay tender. Garnish with fresh parsley.
