Instructions

  1. 1Heat olive oil in a large pot. Sear the chicken thighs on both sides (about 4 minutes per side) until golden brown. Remove the meat from the pot and place it on a plate.
  2. 2In the same pot, add the onion, carrot, celery, and bell pepper. Sauté for 5–7 minutes until the vegetables soften. Then stir in the mushrooms and garlic and cook for another 2 minutes.
  3. 3Return the chicken to the pot. Add the tomato paste, tomato concentrate, stock, oregano, salt, and pepper. Once it comes to a boil, reduce the heat to low, cover, and cook for 30–35 minutes until the meat is completely tender.
  4. 4While the sauce is cooking, cook the whole wheat pasta "al dente" in salted water according to the package instructions.
  5. 5Remove the chicken from the sauce, shred it into small pieces using two forks, and return it to the sauce. Stir to combine the flavors.
  6. 6Mix the pasta with the sauce or serve them separately. Garnish with fresh basil and grated Parmesan.
