Peel the potatoes and cut them into the thinnest possible slices so they bake at the same time as the fish. Chop the garlic, and finely chop the parsley. Cut the lemon into thin slices.

Preheat the oven to 200 °C and line a baking tray with baking paper.

In a bowl, mix the sliced potatoes and cherry tomatoes with one tablespoon of olive oil, half of the chopped garlic, salt and pepper, then spread them over the baking tray.

Season the cleaned trout well with salt and pepper, inside and out. Stuff the fish cavities with the remaining chopped garlic, chopped parsley, a sprig of rosemary and lemon slices.

Place the fish on the prepared vegetable bed, drizzle them with the remaining olive oil, and bake everything together for 25–30 minutes, until the potatoes soften and the fish skin becomes crispy.
