Preheat the oven to 180 °C and line a loaf pan with baking paper.

In a smaller bowl, mix the ingredients for the topping: oat flakes, chopped walnuts, maple syrup, melted butter and cinnamon. Set the topping aside.

In a larger bowl, thoroughly mash the bananas with a fork. Add the Greek yogurt, eggs, honey, melted butter and vanilla extract, and whisk well into a smooth mixture.

Add the whole-grain flour, cinnamon, baking soda and salt to the wet mixture. Gently fold with a spatula just until the ingredients are combined.

Gently fold the apples, cut into small cubes, into the batter, then pour the mixture evenly into the prepared loaf pan.

Evenly distribute the prepared crunchy topping over the top.

Bake for 50 to 55 minutes at 180 °C. If the topping browns too quickly toward the end of baking, loosely cover the pan with aluminum foil. The bread is done when a toothpick inserted into the center comes out clean.

Let the bread cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely before slicing.
