Preheat the oven to 180 °C and line a loaf pan carefully with baking paper to prevent sticking.

In a large bowl, thoroughly mash the ripe bananas with a fork until you get a smooth, almost liquid puree.

Add the natural peanut butter, Greek yogurt, eggs, honey, and vanilla extract to the banana puree. Mix everything well with a hand whisk into a uniform wet mixture.

Then pour the oat flour, baking soda, and a pinch of salt into the bowl. Gently fold with a spatula so the dry and wet ingredients combine—be careful not to overmix the batter.

Gently fold three quarters of the dark chocolate chunks into the batter, then pour the mixture evenly into the prepared pan. Sprinkle the remaining chocolate on top.

Bake for 40 to 45 minutes. The bread is fully baked when a toothpick inserted into the center comes out clean or with just a few moist crumbs.

Remove the bread from the oven and let it cool in the pan for 15 minutes. Then transfer it to a wire rack and let it cool completely before slicing, so it keeps its firm structure.
