Instructions
1
Cut a ripe banana in half. Thoroughly mash one half with a fork in a bowl until smooth, and slice the other half into thin rounds, setting them aside for the final topping.
2
Pour the oats into a small saucepan, add the unsweetened almond milk, the mashed banana half, cinnamon and a pinch of salt. The pinch of salt is key, as it will enhance the natural sweetness of the banana and oats.
3
Place the saucepan over medium heat and slowly bring the mixture to a boil, stirring constantly with a wooden spoon.
4
Once the porridge comes to a boil, reduce the heat to the lowest setting. Stir in the chia seeds and cook slowly for another 5 to 7 minutes, stirring occasionally, until the oats and chia seeds swell and the porridge becomes extremely creamy.
5
Remove the cooked oatmeal from the heat and pour it into a serving bowl.
6
Arrange the reserved banana rounds and fresh blueberries on top, add a spoonful of natural peanut butter, and serve the breakfast warm immediately.
