Instructions

Before cooking, thoroughly rinse the pearl barley under running water and soak it in cold water for at least 4 hours (or overnight), then drain it.

Heat olive oil in a large pot over medium heat. Add finely chopped onion and leek, and sauté for 5 minutes until softened and fragrant.

Add chopped garlic, sliced carrot and celeriac to the softened vegetables. Stir for 2 minutes to release their flavors.

Pour the drained pearl barley into the pot, add the whole Carniolan sausage (or smoked ribs), along with bay leaves and dried marjoram.

Pour hot stock or water over everything, cover the pot, and once it comes to a boil, reduce the heat and simmer slowly for 45 minutes.

After 45 minutes, remove the Carniolan sausage from the pot, slice it into rounds on a cutting board, and return it to the pot.

Add diced potatoes and cooked brown beans to the stew. Season with sea salt and freshly ground black pepper.

Cover the pot again and cook for another 20 to 25 minutes, until the potatoes and barley are completely tender and the stew naturally thickens.

Before serving, remove the bay leaves from the stew, stir in freshly chopped parsley, and serve immediately while hot.
