Instructions
- 1Preheat the oven to 200 °C.
- 2In a large bowl, mix the ground meat, grated onion, garlic, and all the spices (cumin, coriander, oregano, paprika, salt, and pepper).
- 3Knead the mixture with your hands for at least 5 minutes. This is key to making the meat compact and smooth, which will later allow for thin slicing without crumbling.
- 4Shape the meat into a firm, elongated loaf (like a large sausage). Wrap the loaf tightly in aluminum foil like a candy wrapper.
- 5Place the foil-wrapped loaf on a baking tray and bake for 30–35 minutes. After this time, unwrap the foil and bake the meat for another 5–10 minutes, until it lightly browns on the outside.
- 6While the meat is baking, prepare the sauce: mix Greek yogurt, crushed garlic, and lemon juice. Slice the vegetables (cabbage, tomato, cucumber) into thin slices.
- 7Remove the baked meat from the oven and let it rest for 5–10 minutes. This is essential for the juices to settle.
- 8Using a very sharp knife, slice the meat as thinly as possible (as if slicing a real doner kebab).
- 9Quickly warm the pita breads, fill them with the sliced meat, plenty of vegetables, and drizzle with the yogurt sauce.
Nutritional benefits
Replacing classic fatty sauces with Greek yogurt and using lean meat drastically reduces saturated fat intake, while spices like cumin support healthy digestion.
