Instructions

Cut the bacon into smaller pieces on a cutting board. Fry it in a hot pan until crispy, then remove it and drain on paper towel.

Pour off most of the released fat from the pan. Add the spinach to the pan and quickly sauté it just until it wilts (about 1 minute), then set it aside on a plate.

In a bowl, whisk the eggs, salt and ground black pepper well with a whisk. Finely grate the cheddar cheese.

Add olive oil to the same pan, heat it over medium heat and pour in the whisked eggs.

When the bottom of the eggs has set but the top is still slightly soft, arrange the sautéed spinach, crispy bacon and grated cheddar cheese over one half of the omelette.

Carefully fold the omelette in half, cover the pan with a lid for 1 minute to let the cheese melt completely, then slide it onto a plate and serve.
