Pork, loin, boneless, raw

Instructions

Pat the pork steaks dry with a paper towel, season both sides with salt, pepper and a thin layer of mustard.

Heat olive oil in a large deep pan over medium heat. Cook the steaks for 3 minutes on each side until they get a nice golden-brown color, then transfer them to a plate and cover.

Add the sliced onion and a pinch of salt to the same pan. Sauté over medium heat, stirring occasionally, for about 12 to 15 minutes, until softened and nicely caramelized.

Add the chopped garlic to the caramelized onion and sauté for another 1 minute until fragrant. Sprinkle with flour and sauté for 1 minute, stirring constantly.

Gradually pour the beef stock into the pan, scraping up the browned bits from the bottom of the pan with a wooden spoon. Add the bay leaf and dried thyme and bring the sauce to a boil.

Return the seared steaks to the sauce along with all the juices from the plate. Cover the pan and cook over low heat for 25 to 30 minutes, until the meat is completely tender.

While the meat is cooking, boil the peeled and diced potatoes in a pot of salted water (about 18 minutes, until soft). Drain the potatoes.

Add unsalted butter, warm milk, salt and a pinch of nutmeg to the cooked potatoes. Mash everything together with a potato masher into a smooth, creamy mixture.

Divide the warm mashed potatoes among plates, place a juicy pork steak alongside, and generously pour the melted onion gravy over it.
