Using a sharp knife, cut the dates into as small pieces as possible.

In a glass jar or bowl, mix the chia seeds, unsweetened almond milk, cinnamon, vanilla extract, and three-quarters of the chopped dates. Adding the dates directly to the liquid will ensure natural and even sweetening throughout the pudding.

Stir the mixture well with a spoon and let it sit on the counter for 5 minutes, then stir it thoroughly again to prevent lumps from forming.

Cover the jar and refrigerate for at least 4 hours (preferably overnight) so the chia seeds fully swell and create a thick pudding.

The next day, create layers in two jars: place half of the chia pudding at the bottom, add a layer of Greek yogurt, and pour the remaining pudding on top.

Before serving, sprinkle the top with chopped raw pistachios and the remaining date pieces, then serve the pudding immediately.
