Instructions

Preheat the oven to 200 °C. Line a baking tray with parchment paper.

Halve the apricots, remove the pits, and place them cut-side up on the baking tray.

In a small bowl, mix 1 tablespoon of honey and cinnamon, then lightly drizzle this mixture over each apricot half.

Bake the apricots in the preheated oven for 12–15 minutes, until softened and the edges are slightly caramelized (turning golden-brown).

While the apricots are baking, mix the Greek yogurt with vanilla in a bowl. Quickly toast the walnuts in a pan until fragrant.

Remove the baked apricots from the oven, let them cool for 2 minutes, then add a spoonful of yogurt to the center of each, sprinkle with walnuts, and drizzle with the remaining honey.
