In a pot, sauté the chopped onion in olive oil until translucent. Add the sliced carrots and sauté for 5 minutes, until they lightly caramelize.

Stir in the grated ginger, crushed garlic, turmeric and black pepper. Stir for 1 minute until the spices become fragrant.

Pour in the vegetable stock. Once it comes to a boil, reduce the heat, cover and cook for 15–20 minutes, or until the carrots are completely tender.

Meanwhile, in a dry pan over medium heat, quickly toast the pumpkin seeds until they start to pop and become fragrant. Remove from heat and set aside.

Remove the pot from the heat. Add the coconut milk and lemon juice. Blend the soup with an immersion blender until completely smooth and creamy.

Season with additional salt if needed. Serve the soup in bowls, sprinkled with toasted pumpkin seeds and a few drops of olive oil or coconut milk.
