Pour the milk and water into a pot and add a pinch of salt. Heat the mixture over medium heat until it comes to a boil.

Once the liquid boils, reduce the heat to the lowest setting and, while whisking constantly and quickly, slowly pour in the corn grits in a thin stream to prevent lumps from forming.

Cook the polenta over low heat, stirring regularly with a wooden spoon, for about 5 to 8 minutes (depending on the grind of the grits), until it thickens completely and becomes velvety creamy.

Remove the cooked milk dish from the heat, thoroughly stir in the flower honey, and let it rest for 1 to 2 minutes for the flavors to combine.

Divide the warm porridge into two bowls, generously sprinkle with ground cinnamon just before serving, and serve immediately.
