Instructions

Rinse the quinoa in a strainer under running water for at least a minute to remove the bitterness (saponins).

Pour the rinsed quinoa into a saucepan, add almond milk and water. Add grated ginger, lemon zest, cinnamon and a pinch of salt.

Bring to a boil, then reduce the heat to minimum and cook covered for 15–20 minutes, or until the quinoa absorbs most of the liquid and becomes creamy. Stir occasionally.

While the quinoa is cooking, heat the sliced plums with lemon juice in a pan over medium heat. Cook for 5–8 minutes until the fruit softens and releases its juices.

Remove the plums from the heat, stir in the vanilla and chia seeds. Let sit for 5 minutes to thicken the topping.

Remove the cooked quinoa from the heat, stir in the maple syrup and add a spoonful more of milk if needed for extra creaminess.

Divide the pudding into two bowls and top with the plum topping. Serve warm or cold.
