Heat the stock in a pot and keep it hot. In a pan, sauté the porcini mushrooms in one tablespoon of oil over high heat until golden brown. Set them aside on a plate.

In the same pan, heat the remaining oil and sauté the shallot until translucent. Add the rice and toast it (cook for 2 minutes) until the edges become translucent.

Deglaze the rice with white wine and stir until the alcohol evaporates.

Begin gradually adding the hot stock (one ladle at a time). Stir continuously while adding, so the rice releases its starch, creating a creamy texture. Add the next ladle only once the rice has absorbed the previous one.

After about 15 minutes, when the rice is almost cooked (al dente), return the sautéed porcini mushrooms to the pan and add the fresh thyme.

Remove the pan from the heat. Stir in the butter, Parmesan, and lemon zest. Cover for 2 minutes, then stir vigorously (mantecatura) and serve with freshly ground pepper.
