In a medium bowl, whisk the egg whites with a hand whisk for about 30 seconds, until completely foamy and bubbles appear on the surface. This will give the omelet volume.

In a pan, heat half of the olive oil over medium heat. Add the chicken ham and spinach. Sauté just until the spinach wilts (about 1 minute), then remove the contents onto a plate.

Wipe the pan and heat the remaining oil. Pour in the foamy egg whites. Gently lift the edges with a spatula so the uncooked egg whites can flow underneath.

When the egg whites are almost completely set, sprinkle the sautéed spinach, ham and crumbled feta over one half. Season with oregano, salt and pepper.

Carefully fold the omelet in half. Cook for another 30 seconds so the cheese inside warms slightly.

Transfer to a plate and sprinkle with fresh chives. Serve immediately.
