Place the turkey escalopes between two pieces of plastic wrap and carefully pound them with a meat mallet until evenly thin. Season with salt and pepper.

Quickly blanch the spinach in boiling water, immediately cool it under cold water, squeeze out as much liquid as possible, then finely chop it.

In a bowl, mix the ricotta, chopped spinach, grated Parmesan, garlic and nutmeg. Add a pinch of salt if needed.

Spread a layer of the filling on each escalope, leaving the edges free. Roll the meat tightly and secure it with toothpicks or kitchen string.

In a pan with oil, quickly sear the rolls on high heat on all sides (about 2 minutes per side) until golden brown.

Transfer the rolls to a baking dish and bake them in the oven at 180 °C for another 12–15 minutes, until the meat is fully cooked through but still juicy. Let rest for 5 minutes before slicing.
