Instructions

In a larger bowl, mix the almond flour and vanilla protein powder to get a uniform dry mixture.

Add the mascarpone, cold espresso, maple syrup and vanilla extract. Knead everything together with a spoon or your hands into a firm, slightly sticky mixture.

If the mixture is too dry, add a few more drops of coffee; if it's too wet, add a bit more almond flour.

Using your hands, shape small balls (about the size of a walnut). You should get around 12 bites from the given mixture.

Pour the cocoa powder into a smaller bowl and roll each ball in it so it's evenly coated.

Place the bites in the refrigerator for at least 30 minutes to firm up and let the flavors meld together.
