Rinse the millet in a strainer, first with cold water, then with boiling water, to remove any bitterness. Drain it well.

In a saucepan, heat the olive oil and sauté the chopped shallot until translucent. Add the grated carrot and sauté for 3 minutes, until it caramelizes slightly and releases its color.

Add the drained millet to the saucepan. Stir and sauté for 2 minutes, so the grains become coated with oil and develop a gentle nutty aroma.

Add the turmeric, black pepper and ginger. Stir and immediately pour in the hot broth.

Once the liquid comes to a boil, reduce the heat to minimum, cover the saucepan and cook for 15–18 minutes, until the porridge has absorbed all the liquid. Do not stir while cooking.

Turn off the heat and let the covered porridge rest for another 5 minutes. Meanwhile, quickly toast the pumpkin seeds in a dry pan.

Fluff the porridge with a fork (to keep it light), stir in the parsley, and sprinkle with the toasted pumpkin seeds.
