In a small bowl, mix all the dry spices together. Cut the chicken into small cubes and sprinkle it evenly with the spice mixture.

Heat the olive oil in a pan over medium heat. Add the onion and bell pepper and sauté for 4-5 minutes until the vegetables soften. Toward the end, stir in the garlic and corn.

Add the seasoned chicken to the pan and cook until golden (about 6-8 minutes). Then pour in the salsa and cook for another 2 minutes until the liquid thickens slightly – this will prevent the tortilla from becoming soggy.

Wipe the pan clean or use a clean one. Place a tortilla in the pan over moderate heat. Sprinkle a little cheese on one half, add a quarter of the chicken filling, and sprinkle with cheese again (the cheese acts as glue).

Fold the tortilla in half and cook for 2-3 minutes on each side, until golden brown and crispy, and the cheese is completely melted. Repeat with the remaining tortillas.

Let the quesadilla rest for 1-2 minutes before cutting, then slice it into triangles with a pizza cutter and serve.
