Preheat the oven to 180 °C, and line a square baking pan with parchment paper, letting the edges hang over the sides of the pan (for easier removal of the bars).

In a smaller bowl, mix the mixed berries (fresh or frozen can be used), chia seeds, lemon juice and maple syrup. Lightly mash part of the fruit with a fork and let stand for 10 minutes, so the chia seeds swell and create a thick, jam-like filling.

In a larger bowl, mix the oats, spelt flour, ground flaxseed and a pinch of sea salt.

Pour the melted coconut oil and maple syrup into the dry mixture and mix well with a wooden spoon or clean hands to get a crumbly yet homogeneous mixture that holds together when pressed.

Pour about two-thirds of the oat mixture into the prepared baking pan and press it firmly against the bottom with your fingers or the bottom of a glass to create an even and compact base.

Spread the prepared berry and chia seed filling evenly over the oat base.

Sprinkle the remaining third of the oat mixture evenly over the fruit filling to create a crumble-like appearance. Gently press down on top with your fingers.

Bake in the preheated oven for 22 to 25 minutes, or until the top turns a nice golden brown. Let the pastry cool completely (preferably in the refrigerator) before cutting it into 9 equal pieces, as this is the only way the bars will stay compact and not crumble.
