Instructions

First, press the tofu well to remove excess water. Wrap it in paper towels and place a heavy object on top for at least 20–30 minutes. This is key for a crispy texture.

In a small bowl, prepare the marinade: mix the tamari, maple syrup, rice vinegar, sesame oil, grated ginger, and crushed garlic.

Cut the pressed tofu into 2 cm cubes. Place them in a bowl and pour the marinade over them. Let sit for at least 15 minutes (can also be left longer in the refrigerator).

Preheat the oven to 200 °C. Drain the tofu (reserve the marinade) and sprinkle the cubes in the bowl with corn starch. Gently mix so that each cube is evenly coated.

Arrange the tofu cubes on a baking tray lined with baking paper. Bake for 25–30 minutes, until golden and crispy, turning them once halfway through the time.

Drizzle the baked tofu with the remaining marinade and sprinkle with sesame seeds and spring onion. Serve with cooked brown rice or steamed vegetables.
