Instructions

Preheat the oven to 200 °C. Cut off the tops of the peppers and clean out the seeds inside.

In a pan with olive oil, sauté the onion until translucent. Add finely chopped mushrooms and fry for 5 minutes until all the water evaporates.

Add the ground beef and break it apart with a spatula. Cook for 6–8 minutes until the meat browns. Toward the end, stir in the garlic, oregano, salt and pepper. Remove from heat and let cool slightly.

Mix the grated and squeezed zucchini and the egg into the meat mixture. The egg will act as a binder instead of rice. Add 2 tablespoons of tomato passata for extra juiciness.

Fill the peppers with the filling and place them in a baking dish. Pour the remaining lightly salted tomato passata around them.

Bake covered with foil for 30 minutes. Then remove the foil, top each pepper with mozzarella and bake for another 10–15 minutes at 220 °C, until the cheese turns golden.

Serve hot, garnished with fresh basil.
