Quickly blanch a third of the peas (100 g) in a ladleful of stock and blend them into a smooth puree together with half of the mint leaves. This will give the risotto a vivid green color and creamy texture.

In a pan with olive oil, sauté the finely chopped shallot until translucent. Add the rice and toast it for 1–2 minutes, until the edges of the grains become translucent.

Pour in the white wine and stir until the liquid has completely evaporated.

Begin gradually adding the hot stock. After 5 minutes of cooking, add the remaining whole peas (200 g) to the pan. Stir the rice slowly the whole time.

When the rice is almost cooked (about 15 minutes), stir the prepared pea puree into the pan. This will immediately color and bind the risotto.

Remove from the heat for the final "mantecatura". Add cold butter, grated Parmesan, the remaining finely chopped mint, and lemon zest. Cover and let rest for 2 minutes.

Before serving, check the consistency – the risotto should be "all'onda" (wavy), meaning not too dry. If needed, add another spoonful of stock. Serve with freshly ground pepper.
