Instructions

Rinse the quinoa thoroughly under cold running water in a fine-mesh strainer to remove the saponins (bitterness), then drain it.

Heat the olive oil in a saucepan and sauté the finely chopped shallot until translucent. Add the chopped garlic, cumin, and cayenne pepper, and stir for 30 seconds until the spices become fragrant.

Add the quinoa to the saucepan and toast it together with the aromatics for 1 minute, then pour in the hot broth.

Once it comes to a boil, reduce the heat to minimum, cover the saucepan, and cook for 15 minutes, or until the quinoa has absorbed all the liquid and become fluffy.

Gently stir the black beans and corn into the cooked quinoa. Cover the saucepan again and let it rest for 5 minutes so that all the ingredients heat through evenly.

Before serving, add the lime juice and most of the chopped cilantro. Season with salt and pepper to taste.

Divide the dish into bowls. Top with avocado slices and sprinkle with the remaining cilantro. Serve with a lime wedge.
