Preheat the oven to 200 °C. Line a baking tray with parchment paper.

Place the sweet potato, red onion and apples in a large bowl. Drizzle with two tablespoons of olive oil, sprinkle with half of the thyme, salt and pepper, and mix well.

Spread the prepared vegetables and apples in a single layer on the baking tray. Place in the oven and roast for 15 minutes.

While the vegetables are roasting, prepare the meat. Season the pork tenderloin medallions with salt, pepper, and ground red paprika.

Heat the remaining tablespoon of oil in a pan until very hot. Quickly sear the medallions on both sides (about 1-2 minutes per side) until golden brown on the outside but still raw in the middle. This locks in the meat's juiciness.

After 15 minutes, remove the tray from the oven. Add the broccoli florets and crushed garlic among the vegetables. Place the seared pork medallions on top.

Return everything to the oven for another 8–10 minutes, depending on the thickness of the meat. The pork should reach an internal temperature of around 63 °C to remain pink and juicy.

Remove the tray from the oven. Let the meat rest directly on the tray for 5 minutes before serving, so the juices can redistribute evenly.

Serve warm, optionally drizzled with a few drops of balsamic vinegar to further enhance the apple flavor.
