Instructions

Prepare the pineapple by peeling it and cutting it into cubes. For a creamier and colder texture, you can use frozen pineapple.

Pour the coconut water into the blender jug first, then add the coconut yogurt. Having the wet ingredients at the bottom allows for faster, lump-free blending.

Add the fresh baby spinach, pineapple chunks, grated ginger, chia seeds and lemon juice.

Blend all the ingredients on high speed for about 60 seconds, until the smoothie becomes completely smooth, velvety and vibrant green in color.

Pour the smoothie into a large glass and garnish with a pineapple slice, if desired. Serve immediately to preserve all the nutrients.
